Master Cook stainless steel cookware is made of premium 18/8 stainless steel with "Sandwich" bottoms consisting of a 5mm thick aluminum core wrapped by two layers of stainless steel. 25-Qt Brazier measures 17.7" Diameter x 5.9" Deep; 30-quart brazier measures 19.7" diameter x 5.9" deep. Sturdy construction and large diameter cooking area allow for braising large pieces of meat, while the shallow height permits small amounts of liquid to be used. NSF Listed

The extra-thick s/s construction provides even heating. Browned meat or vegetables in a small amount of fat are covered and cooked slowly in a small quantity of liquid. The liquid may be juices from beef or chicken, water, milk, cream, stock or tomato juice.
